The weather is getting a little chillier and that means Chicken Pot Pie! My friends and I had all been talking about making chicken pot pie and I couldn’t help but make some myself this week.
There are so many delicious pot pie recipes out there. I like to use The Pioneer Woman’s leftover Turkey Pot Pie. However, sometimes pot pie can take more time than I have. Especially with sports almost every night of the week. What’s a mom to do?
3 Chicken Pot Pie Hacks
These hacks don’t take away any flavor and save you time.
Premade Pie Crust – I used to try really hard to make everything from scratch. This included pie crusts for my pot pies. However, premade crush is just as good – if not better – especially in my case! The Trader Joe’s pie crust comes frozen, so you’ll want to make sure you let it thaw. However, if you forget as I often do, you can always break it up into pieces. I’ve done this and it still tastes delicious. It just doesn’t look as pretty!
Mirepoix – This Mirepoix is a soup starter and it is the perfect mix of pre-diced veggies for your pot pie! I used to chop everything but again, this is a post about hacks and this hack is too good to pass up! Plus it’s only $2.99 at Trader Joe’s, which is less than the cost of the onion, carrots, and celery purchased separately. Win-win! You can also use this for any soup starter.
Costco Rotisserie Chicken – For $4.99 Costco Rotisserie chicken is a bargain you can’t pass up. I used to thaw my chicken, cut it up, cook it, and then use it in my pot pie. Rotisserie chicken is easy to throw into your saute pan – no need to thaw, cut, and cook.
It used to take me over an hour just to prepare my chicken pot pie, but with these hacks, I’m able to throw this all together in twenty minutes.
A few things I like to add to my chicken pot pie – Slap Ya Mama Seasoning, Thyme, and frozen peas. You can always leave out the peas or use two separate pans – if you have picky eaters this is a great option.
